This is seriously the ultimate in fast breakfast food! It takes around 3-5 minutes to make the night before, then you add your favourite toppings the next morning and voila! You're good to go. No excuses for skipping breakfast now, hey?
It also doubles as a delicious dessert. What would you call that? Bressert? I'm rolling with it.
Serves1
Ingredients:
50g chia seeds
1 cup coconut water
approx 1 cup boiling water
1Tbsp organic maple syrup
1Tbsp raw cacao powder
Method:
Pop the chia seeds into a glass jar (I find salsa jars are a great size. Salsa in a jar is gross but hubby loves it and the jars are the perfect size!) and cover with boiling water and stir.
Add thecoconut water, maple syrup & cacao powder, cover and refrigerate overnight
When you're ready to serve, add your fave toppings like yoghurt, fruit and a sprinkle of nuts, seeds or muesli and BOOM! instant breakky. (or should I say 'bressert')
Note: Chia is such a great flavour neutral source of good carbs and protein. You can take the flavours anywhere you like. This is also delicious when you replace the cacao with vanilla bean paste or even nut butter.
