
My local Greek restaurant does this salad and it's just out of this world. True to Mediterranean cuisine there's only a few ingredients and each one complements each other perfectly with just the right combination of zingy-ness, crunch, creaminess and little bursts of sweetness. It makes an amazing side dish but is often eaten as a meal in it's own right. This one is a permanent fixture on our family's summer menu.
Serves: 2 as a main dish or 4 as a side dish
Ingredients
500g fresh green beans, ends trimmed
50g Danish or Persian feta
10 raw almonds, crushed
6 dried figs, chopped
1 lemon
Drizzle extra virgin olive oil to dress
Method
Steam green beans until just tender, I like mine to retain a decent amount of crunch. Usually around 3 mins on high in the microwave.
Refresh under cold water and drain
Place beans, crushed almonds and chopped figs in a bowl, then crumble the feta over the top
Drizzle with EVOO and lemon juice and turn gently to combine
Spread over a beautiful platter and be taken away to Greece!
